Yesterday was quite the busy day for me. I had taken Koto (my boxer) to doggy day care, so I had to pick him up after I got off of work. I was pretty exhausted and wanted a simple and healthy dinner. This meal ended up being really good. There is a little cafe downstairs in our work building and they serve prepared meals. I noticed they had a vegetarian section and decided to buy something to take home for dinner. I figured that I could make a side vegetable and steam some white rice to go along with it. Semi-homemade is always nice! Here is what I ended up having for dinner:

Sauteed mushrooms and steamed tofu in a brown sauce with onions

I then steamed some white rice and cooked-up some Bok Choy. I heated it with olive oil, added garlic and onions and seasoned with soy sauce, a smidgen of vinegar, salt, pepper and paprika!

This was really good and easy to make. I only wish I bought more of the tofu dish.

What's for Dinner?

It has been almost a month now since I have started my journey as a vegetarian. I am finally at a point where I no longer miss the taste of meat, even if I smell it when I am out and about. I feel a lot healthier since I stopped eating it. I am not overly full and no longer experience a heavy feeling in my stomach whenever I am done with a meal. I will say the biggest challenge is just preparing for my meals each day. That will get better in time because with any change it takes time to readjust to a new way of living. It has been fun; however, to plan my meals ahead of time and try new things. There are many blogs out there that offer a variety of recipe options so, I have been borrowing those and saving the recipes that I would try again and tossing out the ones that didn't do it for me. Overall it makes me feel good knowing I am doing something good for my body. With all the research out there in regards to the meat industry and its effects on our health, I felt this was the best decision for me.

Yesterday was a busy day for me, so I wanted to make something quick, healthy and delicious. I borrowed this Mexican Bowl Recipe from Two Peas and their Pod Blog It was very easy to make and the ingredients list was not too intimidating. This will probably be one of my go to recipes during my busy week.

This recipe consists of Cilantro Lime Rice and black beans with your choice of garnishments. I used Avocado, tomatoes, red onions, fresh lime and cilantro. Then I warmed up a few corn tortillas to serve it with. I figured at a later date, instead of just using black beans I could add Vegan Sausage or Seitan for a more hearty meal; however, this was quite satisfying.

I finally purchased my ticket to visit my Uncle and Aunt in Chattanooga, TN. I have been wanting to visit for quite some time but finally had the finances and time to do so. I hate flying and this is one of the reasons I tend to procrastinate when it is time to buckle down on my travel plans. It will be a nice change of pace and scenery. I bought a couple of things for my mini-vacation. Some cute, cozy and weather-friendly outfits. I wanted to share a new print that I am anxiously awaiting the arrival of... I love The Black Apple Shoppe, Emily Martin is a wonderful artist. Her whimsical and childlike drawings are easy to love. I plan on collecting a few of her works and placing them in perfect frames. I ordered one last week, entitled: Button Collector, its darling and I cannot wait to show it off. I love artists who draw attention to 'the eyes' I always have. The eyes are the first thing I notice on a person and they can say so much about you. To me they are the hardest feature to capture but those who have the ability are truly talented in my opinion.

The Dainty Damselfly...

I love the green banded swallowtail butterfly from Africa I received, it is sitting prettily in my office, waiting to be hung, until then I am admiring its beauty. My next purchase is going to be an insect from Indonesia, it is called the Damselfly (Odonates Species). It looks similar to a dragonfly but its a completely different species.
I might add that I love the name of this beautiful little insect.

Per Wikipedia: Damselflies (suborder Zygoptera) are insects in the order Odonata. Damselflies are similar to dragonflies, but the adults can be differentiated by the fact that the wings of most damselflies are held along, and parallel to, the body when at rest. Furthermore, the hindwing of the damselfly is essentially similar to the forewing, while the hindwing of the dragonfly broadens near the base. Damselflies are also usually smaller, weaker fliers than dragonflies, and their eyes are separated.

I think this insect is lovely and is almost metallic in nature. There is another species: Neurobasis Chinensis, originating fom India that is just as beautiful.

I am so excited because I finally ordered my first authentic, framed butterfly. Ever since I was a little girl, I have loved butterflies and winged insects. My Opa felt it necessary to order us a subscription of Natural Geographic Magazine, so while other kids were enjoying Dr. Seuss, I was reading about nature and the environment. Now that I am older and have found the perfect wall to hang these beauties on, I am beginning my collection. They come with a description and story of where they are from, so I still feel like a little girl learning something new about creation. I am sure that I will be purchasing insects I have never heard of, so I will consider this an educational process. After all, were all just 'Taller Children'. It will not be that cheap, so this is going to be a work in progress but patience is a virtue.

This is a Green banded Swallowtail from Africa, while metallic green colors are common

in many butterfly species this pastel sage green color is quite uncommon for butterflies.

My two favorite albums of the moment, yes I have adored them for quite some time. I have written about this lovely brother and sister duo before. Their music is carefree and their voices are completely enchanting. I am mainly in love with their vocal capabilities, they are able to calm and sooth any weary spirit. Julia reminds me of why I love to sing, when I was a little girl my Opa and Oma bought me a stereo and I would play my favorite songs and record my voice on a mini recorder and make albums for them. I hear Julia sing and it makes me retreat to that creative space. Angus Stone's solo project Lady of the Sunshine is equally amazing. I hope that they both continue to make me and others happy with their music.

Sometimes it makes me sad to hear that many woman have a hard time embracing getting older. I know that young girls are conditioned to aspire to look like what they see on television or in magazines. However, most of those images are severely airbrushed and do not represent the true person. I do think that every woman wants to feel young and stay that way but I think that true beauty comes from within. I have been in the company of many beautiful woman who have aged gracefully without the assistance of modern medicine. I think those types of woman are all to often forgotten and the media has made it seem like once you hit a certain age, it is time to go under the knife. Though it is a personal choice and no one has the right to judge another persons decision, I just wanted to say that there are still those out there who appreciate natural beauty, like myself. Eating right, exercising and taking care of your body inside and out is what is truly important. I believe as long as you do that, it will reflect on the outside. Mature woman hold so much character and wisdom, it is such a far stretch from the motionless faces we are forced to accept as role models.

Basically anything a bride could possibly need or want to complete her look can be found on this site. I think its time to plan someones wedding because I heart this shop!

Today a co-worker of mine described my look as earthy-vintage. I guess I can dig that because I do love to incorporate those two elements into my fashion vibe. My fashion taste is always evolving but it is something I have always been very aware of. I don't ever remember not being into carefully selecting what I wore. Even as a little girl, my mother complained that I would change my outfit on a whim. I love to try new things but there are always pieces of me that never change. When I was younger, I raided thrift stores and would literally buy as many vintage pieces I could possibly afford on my minimum wage budget. One summer when I went to visit my mother, she gave me a case full of old clothes and shoes that belonged to my grandmother. I was so excited to be wearing one-of-a-kind pieces that I knew no one else could possibly own. To this day, I still have an eye for beautiful pieces even if they are on the hanger. I can come up with an instant outfit, sometimes I think being a stylist was a job created just for me.

Indo Beauty...

My mother was born in Jakarta, Indonesia. She has nothing but wonderful stories to tell about her childhood playground, with the exception of having to leave it during the Indonesian war of Independence. However, I love her stories of running in the jungle, playing with the animals she came across and how she was notorious for ruining her pretty dresses. I can never forget my Opa telling me that my mom always seemed to come home with one shoe, somehow one was left behind during her adventures in her exotic homeland. The reason I am telling this story is because when I received the new ad campaign from Anthropologie, the amazing photographs made me reminisce on those stories I heard growing up. My mother is full of exotic beauty, her pictures from her youth make me wonder of how different her life would be had she never left her home. She was around 8 or 9 when she left, yet the place she grew up left an imprint on her heart that she never seemed to let go of. To this day she talks about how she misses it. It would be amazing to take a trip with my mother to Indonesia, so that I could see where she is from. One thing I found quite beautiful were all the lovely batik fabrics from her homeland. I have a few pieces that I was given as a child but maybe one day I will start adding to my collection. In the meantime, I hope you love these photographs as much as I do.

I love vintage paisley, floral and exotic fabrics. They have always caught my creative eye and I do not know why I tend to gravitate to those types of prints even when I am not intentionally trying to do so. I have noticed that it makes its way through my fashion sense, through the decor I choose and art that I love, so I guess it did not surprise me that I found the following photographs to be enjoyable. Some of the photographs are portrait shots of simple pieces of decor but I think they add just the right amount of beauty to any existing space.

EOS Winery has some really great tasting wines. My husband and I were fortunate enough to be able to visit this winery on a whim and purchase a few bottles with his parents discount, since they are members. We had this wine one night with our steak dinner. It combines chocolaty, peppery notes with dark berries and it almost seemed like it had a lemony taste at the end. We loved it and just found out that Bevmo carries wines from EOS Estate Winery, score!

Blend of Petite Shriah (75%), Merlot (23%), and Syrah (2%)

This wine is sourced from vineyards across Californa. This wine has a strong berry and cocoa flavor with hints of Oak. It almost had a bit of a citrus, tangy aftertaste. I paired it with dark chocolate peanut butter cups from Trader Joes and I was one happy girl. This is definitely a wine I am going to add to my favorites and I will have to plan a day just to enjoy this with my girlfriends.

Her name is cool, though she doesn't spell it the way I do. I love her music and it almost looks like we could be related. I enjoy her voice but the music is just as pleasing. It's relaxing to listen to when I write, draw or clean the house. This is the kind of music I listen to when I am alone, otherwise my hubby tells me that it's making him feel lethargic. Not me though, this type of music invigorates me. Sometimes I wish I could play the piano and sing when nobody is listening. Yes, I have crazy daydreams but who doesn't? The San Diego Zoo & Wild Animal Park is now caring for a herd of seven African elephants. The website features a bio for each of these beautiful elephants (http://www.sandiegozoo.org/elephantcam/meet.html), so you can get to know more about where they came from. I would suggest reading about them, the detailed account on each of their personalities is adorable. These wonderful creatures were actually scheduled to be culled due to overpopulation until action was taken on their behalf. I cannot imagine being able to harm any one of these animals, who could be so heartless? It just makes me hope in a time where animals will no longer be harmed by the very ones who are supposed to cherish them. I have always loved horses, since I can remember. As a little girl, I sought out books that included them in the story line. I wished that one day I could own my very own horse. I had never been raised around them nor spent any significant time with them, so why I loved them so dearly was a mystery. I just felt a special connection to horses and for quite some time, it was all I spoke about. I remember a family friend surprised me by taking me to see a horse being trained by it's owner. She asked if I could sit atop the horse as he pranced in a circle, this may sound to some as something simple and insignificant but it was a dream come true for me. I remember that day like it was yesterday. Even though the horse never ran with me on its own, it was still the closest I had ever come to riding. I talked about it for days, it makes me miss the days when something so lucid as gazing at a horse meant the world to me. I still dream of owning my own horse, though it seems unimaginable at this point in my life, I know one day that it will come true.

I think that decorating your home with elements of this beautiful animal can be a little tricky. I am not particularly fond of the Southwest style, so finding the right balance is essential. Blazers for the office...

I have had to do a re-vamp of my office attire. I can no longer wear business casual, instead I have to wear blazers and slacks or full suits. I am not used to having to dress so professionally but it is a rather nice change. Nothing makes me feel prettier than being so well 'put-together'. I never imagined the confidence it would give me but I feel extremely sharp, each and every day I am at work. There are days I do miss being able to wear a pair of jeans but dressing up is so much fun. I only owned a couple suits that I have been putting into heavy rotation and my sister-in-law was nice enough to give me some of her hand-me-down Ann Taylor blazers. I decided to make a trip to Anthropologie and I ended up finding three of the prettiest blazers you have ever seen. These will hold me over for a while.

I wanted to shed a little light on a site that I am working on, for a talented young lady in the city of Johannesburg. It feels quite inconceivable to now have some of my designs traveling across the country into other foreign territories. I never once imagined that my design business would take off to the point that it has. I am happy to say that I have met so many creative individuals along this path. I get so many emails from women encouraging me to continue on my creative journey and that truly motivates me to continue, especially when I have those moments of not feeling worthy. Her Lovely Smile...

A dear friend of mine just passed away. She was such a beautiful person and she had the sweetest smile. I always expected a huge hug from her whenever we met. She was the epitome of elegance and grace. Though she was older in years, I would compliment her on how lovely she always was. She would tell me that a lady never stops wearing heels. She was married to her husband for 65 years and they were an adorable couple. The kind that danced together at every party. Her death made me realize no matter how old you are or how many years you get to spend with someone, the day they leave, you feel like it was never long enough. She will be missed and I have many memories to remember her by. I know I will see her again and that hope is what comforts me. I long for the day that those who are asleep in death will live again and we will never have to say good-bye.

Singing in the Rain...

I have been holding off on purchasing rain boots because every time I finally think its time to try some on, the rain spell has ceased. This time around, two more storms are headed Cali's way. The rain doesn't bother me much, in fact the sound of rain drops hitting my roof at night soothes me. I had my husband open our master bathroom window while I lay in bed so, I could hear it hit the ground. It helped me fall asleep, something about subtle noises like that put me right to sleep. The only thing I dislike about the rain, is having to drive in it. I know I don't spend much time doing that these days but having some protective gear is always essential. I have cute fashionable boots but a good sturdy pair of rain boots would be ideal right now. Here are a few pairs I found exceptionally darling!

I love this duo (Julia and Angus) who happen to be a brother/sister team. Their new album 'Down The Way', which was released March 15th 2010 is brilliant. Julia's voice is delicate and airy and has the ability to captivate any day-dreamers imagination. Angus has a very calming and soft spoken charm about him, he is definitely an old soul and both vocals combined translate wonderfully across harmonious melodies. They are especially beautiful to listen to on a rainy day while I sip some tea and reflect on days past. I love acoustic instruments and I would be thrilled to see them live, unfortunately no tour dates are set for the US. Thus far, they have only made their mark in the UK and Australia. Well, with the exception of this local girl, that is!

My Skincare Regimen...

I have noticed some darker spots on my face, in dermatology terms this is considered to be melasma, or dark skin discoloration that appear on sun-exposed areas of the face. I drive on a fairly sunny road each day to work and the rays of the sun beat on my poor cheeks. I have used lighter forms of spf moisturizers but realize that I need to start taking better care of my skin. The best treatments for melasma are:

•Chemical Peels
•Laser Resurfacing
•Microdermabrasion
•Skin Lightening Creams

Since I have a lot of interest in skin care, I have tried to keep up on new and improved products, I prefer to treat skin conditions in a natural way. I just wrote a blog about Juice Beauty because I love the ingredients in their products. I plan on purchasing from them in the very near future. However, there are a few other companies whose products I came across that promise amazing results. I decided to give them a try because they were the most affordable for me at this time. One of the products even offered a package where you can actually purchase all 27 items in their line at a discounted rate. (The sizes are quite small) but after reading about the quality of the product, I realized that you do not have to use much of it. A little goes a long way and you get to pick and choose which products you will continue to use. The items I purchased are all made with natural/organic ingredients as well.

I mainly purchased MyChelle because I really wanted to try their Pumpkin Peel. I do not usually like to use facial scrubs, they are very abrasive to the skin and can actually cause more damage than good if not used the right way. Facial scrubs can also make your face raw. Just imagine your skin being slightly sanded by little beads, it is actually way more beneficial to do a peel to gently remove layers of skin without the friction.

I purchased this product because it contains Glycolic Acid and hydroquinone (a lightening ingredient), it helps rid of brown spots or discoloration. Glycolic Acid is from Natural fruit acids. This is a day late, I know! I had a very busy day yesterday. :)

I enjoy exploring botanical gardens, in fact as a child some of my best memories were spent with my Opa and Oma at the Arboretum located in Arcadia, CA. We would also make regular visits to The Huntington Library in Pasadena, CA and Descanso Gardens in La Canada Flintridge, CA. Being that my grandparents were both from Indonesia, they had a deep desire to be surrounded by nature's artistry. I can only imagine the beauty they were surrounded by in their native land. I can picture it still, my Opa walking in a graceful stride, with his hands placed delicately behind his back, taking in his surroundings and encouraging us to see and touch. He was extremely acute, he would walk by different plants and teach us their names and their purpose. We would feed the birds, sit and look at the sky and imagine that it was our own private garden. My Oma would pack us lunch and sneak it in, so we could enjoy spending the entire day there. I remember always staying until the parks would close and go home with a sense of wonderment. I miss those days and I cannot wait for the day that I can once again walk side by side with my Opa in a garden.

I, like my Opa, have a deep desire to visit these gardens, that is why I am excited about this upcoming event. Each year U.C. Riverside hosts a Spring and Fall Plant sale for local residents. This special event is focused on their Fall collection. They offer colorful landscape trees and shrubs, flowering perennials, vines, shade plants, lots of herbs, cacti and succulents, house and patio plants, miniature roses, orchids and easy-to-grow wildflower seeds. A special selection of showy, water-efficient and California native plants will also be available for the fall planting season. You can enjoy refreshments and live music while you browse.

"Plants established during fall and winter grow faster in spring and require less water next summer. You'll find plenty of plants to choose from at the Friends of UCR Botanic Gardens Fall Plant Sale. There will be nearly 10,000 plants, including many rare and unusual varieties, as well as some old favorites."

The Botanic Gardens cover more than 40 acres and feature nearly 3500 plant species from around the world. You can walk through beautiful vistas and numerous scenic trails. A wide array of blooming plants can be seen year around. How romantic!

Wellness Wednesdays: Date Night or Two...

I realize that after months (or years) of dating and trying to get to know your significant other, the engagement too quickly passes and you are finally married. During that process you spend quality time together. You dissect and discover everything you possibly can about the other person. All too often people settle in and forget about all the fun and exciting things they used to do together, while they were still dating. I never want to forget why I fell in love in the first place. I think it's important to have a special day set aside for each other, to filter the mundane affairs of life. To be spontaneous and to still try to unearth parts of each other that you never knew. After three years of marriage, there are still those moments where I am surprised by a side of 'My Love' that I never knew. People most often hide their gifts for fear of rejection, when you build trust those parts of each other are expressed and you are blessed to know the deeper person.

I know it is healthy to spend time with friends and family. There are many days that I love being with my girlfriends, doing girly things and being silly. However, there are wonderful times spent with my husband. The reason is because I know he will always be there for me. He acknowledges my good qualities and cares for me when I am sick. He is aware of my flaws but loves me the same, despite my faults. He is my best-friend and I know through thick and thin, he will be by my side. Friends come and go, people change and relationships will not always remain the same. Who you are at one time can change and the type of things that draw you to certain people may later turn you away. Such is life and you are a great friend if you accept the fact that friends change.

There is a quote I love: "What is a Friend? I will tell you. It is a person with whom you dare to be yourself."

To me genuine friendship involves love, kindness, forgiveness, loyalty, trust, commitment and acceptance. If you are able to find that with a close friend that is a beautiful thing, for me it came in the form of a partner. My whole point is that you should spend quality time with the person you love, seek out ways to have fun with each other. Our date nights may not consist of the same things we did while we were dating but we still try to enjoy each others company. Our goal is to plan special dates for each other, our trips can be inexpensive and local like a simple dinner and movie or we can save and plan for a big trip. We hope to travel more and explore different locations that we have never been to before. I cannot wait to taste different cuisines and photograph various locations on our journey together...

The Art Thursdays: My Music Picks & My love for headphones

Music, how I love thee. I seek out new artists, like a diabetic seeks out twinkies. I love the way music makes me feel and how it seems to without fail, put my mind at ease. I recall countless nights, as a child falling asleep, while my headphones emitted my favorite tunes. My old skool headphones were my version of a ghetto blaster. Headphones, in my opinion, have many purposes. They can be a roadblock for weirdo's at the gym. There is nothing more annoying than somebody trying to conversate with you while your trying to focus on doing a front lunge. They also create a mini stereo for your ears only, no need to annoy the person sitting next to you. I have a wide range of music I love, so its fine that not everyone shares my musical taste. I'd like to think that my taste is pretty eclectic. I love great artists, especially those who write their own music. I am a deep thinker by nature so, if the lyrics have no real meaning or depth, I honestly cannot get into it. There is so much garbage on the radio these days, its nice to come across artists that are truly talented and have something positive to say.

Wellness Wednesdays:Coconut Milk and it's many uses

Coconut milk is the milky white, sweet liquid that is obtained from the flesh of a mature coconut. Coconut milk provides a wide array of vitamins, minerals and other vital nutrients. Such as vitamin A, E, potassium and calcium. One cup of canned coconut milk contains 445 calories. It has no cholesterol, it is very low in sodium and high in Manganese. Manganese keeps your bones strong and healthy. It assists your body in synthesizing fatty acids,cholesterol and helps maintain normal blood sugar levels. It also promotes optimal function of the thyroid gland.

Even though coconut milk is high in saturated fat, it can actually aid in weight loss. How so? The saturated fat is composed of short-chain and medium-chain fatty acids that are quickly and easily assimilated into the body. The fatty acids do not end up as fat in the body like the long-chain fatty acids in cow’s milk. The fat mostly gets burnt as energy instead of being kept in the body as fat.

There are many uses for coconut milk, some of the ways I use it:

-In my morning Cafe accompanied with Agave Nectar or Stevia
-In Smoothies
-In my breakfast cereal or oatmeal
-Substitute in recipes that require milk (I am lactose intolerant)
-Coconut Rice Dishes (I also use Brown Rice in place of white)
-Soups like Green Curry (Yummy)

I also use coconut oil as a beauty aid. I use it to condition my hair and skin. I will leave it in my hair for an hour or two and then wash it out. When its dry and styled, it feels silky and soft. It helps keep my skin moisturized w/out feeling greasy.

Tasty Treat-Tuesday: Frozen Strawberry Souffles

Planning a brunch that will include all of your closest friends? How about a baby or bridal shower? I fell in love with these little treats, the moment I caught a glimpse of them. They are simple, yet elegant and would add the perfect touch to any special event. The recipe only calls for 6 ingredients and the directions seem quite easy to follow. I feel like planning an entire party around these lovely souffles!

Frozen Strawberry Souffles

Ingredients

(Makes 16)

4 pints fresh strawberries, rinsed and hulled

4 tablespoons fresh lemon juice

3 cups plus 2 tablespoons sugar

5 1/2 teaspoons unflavored gelatin

3 cups heavy cream

Candied Strawberry Chips

Directions

1.Puree strawberries, lemon juice, and 3 cups sugar in a food processor. Press through a fine sieve into a bowl, discarding pulp. You should have 6 cups puree.

2.Prepare an ice bath; set aside. In a medium heatproof bowl set over a pan of simmering water, dissolve gelatin in 3 tablespoons cold water. Add 1 1/2 cups of the strawberry puree; return mixture to bowl with remaining strawberry puree.

3.Set bowl in ice bath until mixture is chilled and slightly thick, about 20 minutes, stirring frequently. In a separate bowl, whip 2 cups cream to stiff peaks, and fold into strawberry mixture.

4.Cut parchment paper into 16 strips, each 2 3/4 by 10 inches. Tape each strip around a 3-ounce ramekin so it extends above the rim by about 2 inches. Place ramekins on a rimmed baking sheet; fill each with about 1/2 cup strawberry mixture. Freeze until set, about 3 hours.

5.Remove from freezer 20 minutes before serving; remove parchment collars. Whip remaining cup cream with 2 tablespoons sugar. Serve souffles with whipped cream and candied chips

(Makes about 5 dozen)

1/2 cup sugar

10 strawberries, rinsed and hulled

Directions

1.In a small saucepan over medium-high heat, bring sugar and 1/2 cup water to boil, stirring until sugar has dissolved. Remove from heat; let cool completely.

2.Preheat oven to 200 degrees. Slice strawberries lengthwise as thinly as possible. Dip slices in cooled syrup; place on parchment-lined baking sheet. Bake until dry but still bright red, about 2 hours.

3.Immediately transfer chips to a wire rack to cool completely.

Fashion Friday: The cowboy boot

The question arises, just how should I wear cowboy boots? I recently pondered this question myself after I purchased a pair of vintage, slouchy leather cowboy boots on Etsy. I had not considered how I would wear them, I just knew they were stunning and had my name written all over them. I figured that the inspiration for an outfit would come later. I found numerous photos that featured darling outfits that were accessorised with cowboy boots, some I probably would have never considered myself. Here are a few options I found I could possibly pull off.

Yesterday, I went shopping for a new rug for our living room and I came across this adorable chair. I loved the pattern and design. It definitely would look great with the rug and curtains I was eyeing as well. I won't write too much about each item in detail but I will post pics to show which items I believe would look amazing in our living room
